Red Lentil & Squash Curry Stew. {Oh She Glows}



I made this on Halloween... and told the kids it was my witch's stew... and cackled the whole time. Good times. It was the perfect healthy fix before their sugar fix. It's an OhSheGlows and it is GOOOOD!

1 teaspoon Extra virgin olive oil
1 sweet onion, chopped
3 garlic cloves, minced
1 tablespoon good quality curry powder (or more to taste)
1 carton broth (4 cups) I used low-sodium
1 cup red lentils
3 cups cooked butternut squash
1 cup greens of choice
Fresh grated ginger, to taste (optional)
Kosher salt & black pepper, to taste (I used about 1/2 tsp salt)

1. In a large pot, add EVOO and chopped onion and minced garlic. Sauté for about 5 minutes over low-medium heat.

2. Stir in curry powder and cook another couple minutes. Add broth and lentils and bring to a boil. Reduce heat and cook for 10 minutes.

3. Stir in cooked butternut squash and greens of choice. Cook over medium heat for about 5-8 minutes. Season with salt, pepper, and add some freshly grated ginger to taste.

Veggie Spring Rolls with Peanut Dipping Sauce.

I've been meaning to try this for about forever. First dilemma, I couldn't find them - I'm blind. They're basically in every grocery store. Second dilemma, needed a good dipping sauce -- not from a jar. When I went to my friend Kelly's baby shower - her sister (Crysta) had this awesome spread of yummy food. And there were her spring rolls. I knew she'd have my back, since she's a crazy healthy eater, and so she posted it up where she got her recipe for the yummy peanut dipping sauce (lovesveggiesandyoga). These are so... sooo... sooo... SO good. 

Inside Veggies... whatever you like, I like...
carrots, julienned
cucumbers, julienned
peppers, sliced 
sprouts
avocado, sliced


Averie’s 2 Minute Peanut Sauce
1/3 cup peanut butter
1/4 cup maple syrup/agave nectar blend
1/4 cup sesame oil
1/4 cup apple cider vinegar 
1 teaspoon ginger powder (optional)

Whisk all together. (I try to chill it before I use it...just a preference.)

Soak rice paper wrappers in warm water for 15 seconds. Put on a flat surface like a cutting board. Fill with veggies and wrap up like a egg roll folding in the sides. And dip. Yum.

Tamarind Lentils with Poppy Seed-Cornmeal Roti.

We're big fans of lentils around here... and these were a hit. The roti were really good too... a lot of work... and I'm still debating if they were worth all the work. I've realized that sometimes it's just fun to learn a new technique in cooking... doesn't mean I've got to make it again. Sometimes once is enough. The jury's still out.

Carrot Oatmeal Cookies.

After loving Nikki's Healthy Cookie on 101 Cookbooks, I saw a related to link for these... read the ingredients and fell in love as I made them in my mouth. I was so excited to make them... and they did NOT disappoint. A tad crumbly... but so, so awesome and moist. And can you say healthy!? I made them and then sent the link right to Natalie... hoping I could pay her back for the first healthy cookie intro.

1 cup whole wheat pastry flour
1 teaspoon baking powder
scant 1/2 teaspoon fine grain sea salt
1 cup rolled oats
2/3 cup chopped walnuts
1 cup shredded carrots
1/2 cup real maple syrup, room temperature
1/2 cup unrefined (fragrant) coconut oil, warmed until just melted
1 teaspoon grated fresh ginger

Preheat oven to 375F degrees and line two baking sheets with parchment paper. In a large bowl whisk together the flour, baking powder, salt, and oats. Add the nuts and carrots. In a separate smaller bowl use a whisk to combine the maple syrup, coconut oil, and ginger. Add this to the flour mixture and stir until just combined. Drop onto prepared baking sheets, one level tablespoonful at a time, leaving about 2 inches between each cookie. Bake in the top 1/3 of the oven for 10 - 12 minutes or until the cookies are golden on top and bottom.


Makes about 2 1/2 dozen cookies.

Spicy Peanut Noodles with Broccoli.

This month my parents went to Dr. McDougall's advanced study weekend seminar (so jealous!) and they took a class from this amazing vegan, unprocessed, salt-free, sugar-free chef, Chef AJ. My mom loved her class, loved her personality and loved her food. She was sold. Bought her book. Bought me her book. And now we're both sold.

I skipped the reading and went straight to the recipes. She doesn't use any processed foods. No salt and she only uses dates to sweeten things. Her stuff is awesome. Here's the first thing I tried from Chef AJ. Sold and love how it comes together so quickley!

1 pound brown rice noodles (spaghetti or linguine)
1 pound broccoli florets
3/4 cup peanut butter, unsweetened and unsalted
3/4 cup water
1/4 cup rice vinegar
2 tablespoons low sodium tamari
2 tablespoons date syrup
2 garlic cloves, pressed
1/4 - 1/2 ounce piece of fresh ginger, pressed
1/2 teaspoon red pepper flakes
8 scallions, thinly sliced on the diagonal
sesame seeds or chopped unsalted peanuts for garnish (optional)

Cook pasta according to directions on package. {Run under cold water when done. She serves it cold, I've never tried it that way... so if you want it warm, don't rinse. If you want it cold, rinse and tell me how it was.} Drain and place in a large bowl.

Blanch broccoli {and run under cold water when done}. Dran and add to pasta bowl along with the scallions.

To make the sauce, combine peanut butter, water, rice vinegar, tamari, date syrup, garlic, ginger and red pepper in a suacepan over medium-high heat. Whisk until smooth and cook for about 10 minutes until thickened. Pour dressing over noodles and broccoli and thoroughly combine. {Chill until it becomes cold.}

Banana-Ginger Pancakes.

I love a good breakfast for dinner, and these were a hit. Although the Sweet Potato Hash with Peppers from the same cookbook was not. I knew it wouldn't be... my family is not a fan of sweet potatoes unless I'm sneaky about them {which I did with the leftovers... pureed them up with some black beans and they devoured them as black bean burritos}. Coco actually ate a few bites... but that's really not a good indicator since she's back and forth all the time.

1 ¼ cups whole wheat pastry flour
2 teaspoons baking powder
1 ½ teaspoons ground ginger
¼ teaspoon salt
2 tablespoons agave nectar
1 ¼ cups vanilla soy milk
3 tablespoons unsweetened applesauce
1 teaspoon vanilla extract
1 cup mashed bananas
Vegetable oil cooking spray

In a medium bowl, combine the flour, baking powder, ginger, and salt. In another bowl, combine the agave nectar, soy milk, applesauce, and vanilla. Add the liquid to the flour mixture. Mix until just combined (the batter will be lumpy). Add the bananas.

Heat a large skillet over medium heat, then coat with cooking spray. Pour ¼ cup of batter onto the hot skillet. The pancake is ready to flip when tiny bubbles appear on the top and burst, and the pancake is lightly browned on the edges. Flip the pancake and cook for about 1 to 2 minutes, until the underside is lightly browned. Adjust your heat so that the pancakes cook for about 1 to 2 minutes per side.

Spiced Pumpkin Oatmeal.

It's the end of the month... I'm out of my budget money for groceries... my 50 pound bag of steel cut oats is gone... and I'm having to figure out something good for breakfast. I remember seeing this pumpkin oatmeal in my new cookbook... so I pulled it out. Luckily had all the ingredients for... prepped as  much as I could the night before... got up a little earlier to start cooking it for the kids... and bam! It was yummy! I think the cinnamon was a bit strong - so when I do it again I'll tone it down some. It was yummy, but we missed our steel cuts. Creatures of habit. You could do a whole lot worse with no money, that's for sure!

2 cups old-fashioned rolled oats
1/3 cup raisins
1/4 cup dried cranberries
1 cup canned pumpkin
2 tablespoons agave nectar
4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon vanilla extract

Combine all ingredients with 4 cups of water in saucepan. Cook over medium heat, stirring occasionally, until the liquid is mostly absorbed and the oatmeal is creamy.

Carrot Cream Soup.

I have mixed feelings about this soup, and almost didn't post it because I'm not sure if and when I'll make it again. The kids weren't fans... I thought it was pretty good considering it's so healthy. It's just in serious need of some spices and herbs. So, froze half of it and am gonna post it so it will remind me to work on it later.

20 carrots, washed, peeled, and cut into large chunks
{I used 10 because I get those big fatty ones from Costco}
2 potatoes, peeled and cut into large chunks
3 onions, peeled and chopped
2 cups soy milk
2 cups water
1 small zucchini, sliced
1 tablespoon minced fresh ginger root {optional}
2 garlic cloves
1 tablespoon dehydrated vegetable instant soup mix or VegeBase
1/4 cup raw cashews
1/4 cup raw almonds

Add all the ingredients except the nuts to a pot and summer on low heat for 20 minutes. Then puree the cooked soup with the nuts in food processor or blender until smooth.

SWEET AND SOUR THAI NOODLE BOWLS

From my girl Rachael Ray... modified for our belly bites. She will always and forever remain "my girl" for giving me some of my most favorite meals - even if we've changed what goes into our bellies. I'll just keep modifying.

Shayne loves this and said he could eat this once a week... It's a lot of the same ingredients as our favorite tilapia dish - so I figured it'd be a for sure thing with him. I told Shayne when we decided to change our eating that I'd die finding meals that left him fulfilled and happy the way his meat made him - and this is one of them. Yeah!! 1 pound whole wheat or whole grain spaghetti
2 leeks, thinly sliced and thoroughly cleaned {I usually use just one}
A couple of generous handfuls shitake mushrooms, stems removed and thinly sliced
3 to 4 cloves garlic, finely chopped
2 inches ginger root, grated
1/3 cup Tamari (or Bragg's Liquid Aminos - healthier and a quarter of the sodium)
2 tablespoons agave syrup or honey
2 limes, zest and juice of 1, the other cut into wedges, divided
Sriracha or other hot sauce, to taste
2 cups shredded romaine or iceberg lettuce
Cilantro or basil, chopped, for garnish

Bring a pot of water to a boil for the pasta. Add salt and cook pasta to al dente.

When the pasta goes into the water, heat some water (enough to fill the bottom of the pan) in a large skillet over high heat add leeks and mushrooms to the skillet and stir-fry 2 minutes. Keep adding water once it's evaporated out. Add garlic and ginger, and cook a minute more. Stir in Tamari (or Liquid Aminos), agave syrup or honey, lime zest and juice, and hot sauce to taste.

In a large serving bowl, toss veggies with the meat, noodles and lettuce to combine. Garnish with cilantro or basil and serve with lime wedges alongside.

Ginger-Garlic Fish in Parchment

I had this the week before I had Corynn and thought I was in heaven it was so good. I was a little worried that post pregnancy taste buds wouldn't think it was so good, but it was even better.

Parchment paper
4 (6 to 7-ounce) portions sea bass {$$$, I use a cheaper but still yummy Tilapia}
Salt and freshly ground black pepper
1 bunch scallions, cut into 3-inch pieces on an angle
1/2 pound shiitake mushrooms, stemmed and sliced
3 to 4-inch knob ginger, peeled and thinly sliced
4 large cloves garlic, peeled and thinly sliced
3 tablespoons honey
2 tablespoons rice wine vinegar
3 tablespoons tamari sauce {bragg's liquid aminios}

Preheat oven to 375 degrees F.

Rip off 4 pieces of parchment to form packets each about 12-inches long. Season fish with salt and pepper. Place a piece of parchment in a shallow dish then in the center of the paper stack 1/4 of the scallions and shiitakes, layer with slices of ginger and garlic and top with fish.

Combine the honey, vinegar and tamari and pour 1/4 of the sauce over fish. Fold over the top of the parchment then roll the sides in to form a sealed pouch. Repeat with remaining parchment and ingredients.

Arrange the pouches on a baking sheet and roast in hot oven 12 to 14 minutes.

Rachael (b/c by now, we're on a first name basis) puts a Lemon Chive Noodle with this, which I've never made. I just cook up some thin spaghetti whole wheat noodles and dump the packet of fish, shrooms and juices on top of it. All the juices from the pack works perfectly for a sauce. Amazing. Plain and Simple.
