Homemade Crunchy Maple Quinoa Cereal.

We love our favorite granola, but even the yummiest stuff needs a break. OhSheGlows has some gooood stuff, and this granola is one of them. I add some mixed nuts to roast with it because it's just gooood. I'll eat it like popcorn too.

1 1/2 cups cooked quinoa
1 tablespoons chia seeds
2 tablespoons pure maple syrup
1/2-3/4 teaspoon cinnamon
1 teaspoon vanilla
pinch or two sea salt
1 1/2 cups favorite nuts, chopped (i like almonds, pecans and walnuts)

In a small bowl mix everything together. Pour onto a cookie sheet lined with parchment paper. Break up into chunks with a spoon and flatten with a hand as if you were making flatbread. Cook for 30-50 minutes at 325*F, being sure to check half way through and adjust cooking time if necessary. Flip cereal around with a spatula for more even cooking. Cereal should be slightly golden brown when finished. Remove from oven and cool.

Enjoy in a bowl with your favorite milk and toppings over top! Peaches please.

Mediterranean Veggie Burgers with Provolone and Italian Ketchup.

I've been following Rachael Ray for a long time now... and for a girl who claims to be "Queen of Burgers" and never had a veggie burger until now... I wanna say - it's about time!! I was totally excited while watching her show and she had veggie burgers on the docket to make at the end. Yay! I really like the beef-free bean burgers... but wanted another stanby. This for sure is a keeper. And yes, I did slurge and got the provolone cheese for it.

There's a lot of steps, so I was in my right mind to go ahead and double the recipe and freeze half for later. It uses couscous or quinoa and lentils, so is a great way to use leftovers.

I didn't make the ketchup this go round, time was not on my side. Which looks really, really good and would add even more flavor. But I added avocado and sprouts and some natural ketchup. Yum! Shayne really liked them too. You have to focus on the fact that they're not a hamburger sub, just something a little like them but healthy for you!

For the Ketchup:

1 cup tomato sauce
Salt and pepper
1 clove crushed garlic
3 tablespoons aged balsamic vinegar
1 1/2 teaspoons light brown sugar
1 teaspoon dried oregano

For the Burgers:
3 tablespoons EVOO – Extra Virgin Olive Oil, divided
1 small carrot, chopped
1 small onion, chopped
12 cremini mushrooms, chopped
2 tablespoons fresh thyme
4 cloves garlic, finely chopped
Salt and pepper
A small handful dried mushrooms, all porcini or mixed
2 1/2 cups cooked brown lentils
1 1/2 cups cooked quinoa (for nuttier burgers) or cooked cold couscous (for softer burgers)
1 cup drained chickpeas (I used black beans)
1/4 cup toasted pine nuts or sliced almonds
1/4 cup currants or chopped raisins  (omitted, too scared to mess 'em up)
1 egg (For a vegan burger, omit -- be gentle when flipping burgers so they don't fall apart)

6 slices Provolone cheese
Ciabatta or other crusty rolls, split and lightly toasted
Arugula dressed lightly with lemon juice and EVOO (i used sprouts)

Combine ketchup ingredients in a small pot and bring to a bubble. Reduce heat to low and simmer to thicken to the consistency of ketchup, 15-20 minutes.

Meanwhile, heat a tablespoon EVOO in a skillet over medium to medium-high heat. Add carrot, onions and mushrooms, and sauté to tender. Add thyme and garlic, season with salt and pepper, cook a minute or 2 more then turn off heat and cool.

To a food processor bowl, add a few pieces of dried mushrooms. Process to finely chop then add lentils, quinoa or couscous, chickpeas, nuts and raisins. Season with salt and pepper and add cooled, cooked vegetables. Pulse until well combined. Add egg and pulse a few more times. Form 6 patties.

Heat remaining 2 tablespoons EVOO in a large skillet over medium-high heat. Add patties and cook 5-6 minutes. Flip burgers, cook 2-3 minutes more, add cheese and tent pan with tin foil to melt cheese, 1-2 minutes. Serve on rolls with greens and Italian ketchup.

Holiday Soup.

This stuff was goood...
especially with a little faux parmesan cheese sprinkled on top.

1 large carrot, peeled and chopped
1/2 cup red quinoa, uncooked
1 tablespoon extra virgin olive oil
1 medium sweet onion, finely chopped
1 medium zucchini, chopped
3 cloves garlic, minced
1 vegetable bouillon cube (not low sodium)  I used it, and yum!
6 cups water, boiled
One 15-ounce can diced tomatoes
1.5-2 cups cooked black beans (about one 15oz can)
1 teaspoon good-quality curry powder
Pinch or two of cinnamon
Pinch of ground nutmeg
2 cups baby spinach leaves, well rinsed and roughly chopped
1/2 tsp kosher salt, to taste
Freshly ground black pepper, to taste
Pinch of saffron threads (optional, but tasted amazing)


Heat the oil in a large soup pot. Add the chopped sweet onion and sauté over medium-low heat until translucent. Add the chopped carrots, chopped zucchini, and minced garlic, and continue to sauté for about 5-7 minutes.

Place your bouillon cube into a medium sized bowl. Boil 6 cups of water and pour over the bouillon cube. Stir well to dissolve. Add bouillon mixture, tomatoes, red quinoa, black beans, and spices + seasonings. Bring to a boil and then simmer gently for 15 to 20 minutes.

Add the roughly chopped spinach, stir well, and cover. Simmer on low for about 15-35 minutes. The longer you cook it the more the flavours will develop. Taste test and adjust seasonings if necessary. I also have a feeling this soup will be even better the next day! Garnish with nuts of choice if preferred.

Quinoa and Black Beans.

Yum... Shayne said, "It's good, but it's not like I'm going to request this one." Well, that's all good and all until we saw how much Corynn tore-it-up. And if that stubborn girl likes it... we'll be having it again! It was real good the next day for lunch, wrapped up in a whole grain tortilla with avocado and tomatoes. Thanks Jami!

1 onion, chopped
3 cloves garlic, peeled and chopped
1 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels (or one can corn)
2 (15 ounce) cans black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
Juice of one lime
1/2 cup chopped fresh cilantro
garnish with avocado or sour cream

First start by soaking quinoa in water. Before you add it to your sauce pan rinse very well and drain.

Heat some water in a medium saucepan over medium heat. Steam-fry the onion and garlic, and saute until lightly browned.

Mix quinoa into the saucepan and cover with broth. Season with cumin, cayenne pepper, salt, and pepper. Add canned tomatoes (drained). Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes.

Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro and lime juice.

Almond-Quinoa Muffins

I originally wasn't going to post them because they were the biggest bomb when I followed the original recipe. I have never used the spice, cardamom, and should have known to omit it when I smelled it for the first time. To me, it smells like road trips as a family growing up because my Dad was always eating black licorice. And while I love black licorice... I do not like it in my muffins! I made them at night so Ava could put them in her lunch the next day. After I made them... I was repulsed...and I gave it to Shayne - my other taste tester. While he was not grossed out, he didn't think they should be a repeat offender. So, maybe Ava would like them. Not so. When I asked her if she liked her muffins, she gave me the same face I had when I first ate them.

Not wanting to give up on them all together, because they had great and healthy bones - I omitted the cardamom and doubled the cinnamon... pure yumminess!

1 cup almond milk, unsweetened
1 tablespoon ground flaxseeds
1/4 cup applesauce {or oil}
1/4 cup agave nectar or pure maple syrup
1/2 teaspoon vanilla extract
1 1/4 cup whole wheat pastry flour {or all-purpose flour}
1/4 cup almond meal or almond flour {i ground the almonds in my blender}
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
{1/2 teaspoon ground cardamom - or if you like licorice muffins, be my guest}1 1/4 cups cooked quinoa
1/2 cup finely chopped dried apricots or currants {I haven't tried it with these yet}

Preheat the oven to 350*F and lightly grease a non-stick 12-cup muffin tin. In a medium-size bowl, whisk together the soy milk and ground flaxseed. Allow to sit for 1 minute, then whisk in oil, agave nectar and vanilla.

In a separate large bowl, sift together flour, almond meal, baking soda, baking powder, salt and cinnamon. Add the wet ingredients to the dry, mixing until just incorporated. Gently fold in the cooked quinoa and the apricots and mix until only the large lumps are gone.

Pour into the prepared muffin tin and bake for 20 to 22 minutes until a toothpick inserted into the center of a muffin tin comes out clean.

Quinoa with Navy Beans and Almonds.

I'm a big fan of Dr. Neal Barnard. His book Reversing Diabetes totally gave me the last little push I need to get my family converted over to a plant-based diet. I've gone through a lot of his recipes from that book... and was totally stoked to see he had a new cookbook, the get healthy, go vegan cookbook, coming out. I got on the waiting list at the library (all of 1 person was ahead of me) and waited.

This is my first try from it, and it was yummy, simple and fresh. I made it that night because I had all the ingredients on hand. I can't wait to try more...
1 cup quinoa, rinsed in a fine sieve
1/4 cup vegetable broth
1 cup cremini mushrooms, sliced
1/2 cup onion, chopped
1/2 cup red bell pepper, chopped
2 tablespoons lemon juice
1 (15-ounce) can white navy beans, drained and rinsed
kosher or sea salt to taste
freshly ground black pepper to taste
1 tablespoon slivered almonds, toasted
2 tablespoons fresh parsley, finely chopped

Bring 2 cups of water to a boil in a small saucepan. Add the rinsed quinoa, bring to a boil again, lower the heat, cover, and simmer for 15 minutes.

Meanwhile, heat the vegetable broth in a medium skillet over medium heat. Add the mushrooms and saute for 2 minutes. Add the onion and bell pepper and saute for 5 minutes until the mushrooms are browned. Add the lemon juice, beans, and cooked quinoa. Season with salt and black pepper and mix well. Garnish with the almonds and parsley, serve.
