Disappearing Lasagna. {Chef AJ}


I don't care who you are... meat-eater or a plant-eater... this stuff is gooood! While we eat our plant-based dinners, my husband and I are always asking ourselves if this meal would satisfy a "normal" meat-eater. This is a for sure, a yes. It's from Chef AJ's book Unprocessed... and is the best nonmeat lasagna I've had. And I've made a lot. And it quite possibly could beat out my meat one. You for sure don't have the cheese and meat hangover with this one.
 
It is somewhat of a pain to make because of the long ingredient list and the different steps. BUT, I make double and freeze the other. It does awesome being baked right out of the freezer too.

2 boxes of no boil rice lasagna noodles (or whole wheat)
6 cups of your favorite marinara sauce
 
"ricotta"
2 cans cannellini beans, drained and rinsed OR 1 box extra firm water packed tofu (19 oz. each)
2 ounces of fresh basil
1 cup pine nuts, raw cashews or hemp seeds
2 cloves of garlic, minced
1/4 cup low-sodium miso
1/4 cup nutritional yeast
1/4 cup lemon juice
1/8 teaspoon red pepper flakes
2 pounds frozen, chopped spinach  OR 1 pound frozen kale (defrosted, drained with all liquid squeezed out)
 
Mushroom Mixture "Meat"
2 cloves garlic, minced
2 pounds mushrooms, sliced (love crimini here)
1/4 cup low-sodium tamari
1 large red onion, finely diced
 
1 4oz. can sliced olives, rinsed and drained
faux parmesan (optional)
 
To make the "ricotta" filling in a food processor fitted with the "S" blade add the beans, basil, garlic, lemon juics, miso and nutritional yeast, pine nuts and red pepper flakes. Process until smooth. Add drained spinach/kale and process again.
 
In a large non-stick saute pan, saute the onion in 2 tablespoons water until translucent; about 8 minutes. Add more water if necessary. Add 2 cloves of garlic, the mushrooms and tamari and saute until browned. Taste mixture and add more garlic or tamari according to your taste. Cook until mushrooms appear to be glazed and there is no or very little liquid in the pan.
 
Pour 3 cups of the marinara in a 9x13 pan. Place one layer of the noodles on top. Cover the noodles with half of the ricotta mixture, then with half of the mushroom mixture. Place another layer of noodles on the mushroom mixture and add the remaining half of the ricotta and the remaining half of the musthroom mixture. Place one more layer of noodles on top of the mushroom mixture and smother evenly with the remaining marinara sauce. Sprinkle the sliced olives on top of the sauce alond with a liberal sprinkling of faux parmesan.
 
I like my dumbed down version...
3 cups marinara
noodles
1/2 ricotta
1/2 mushroom
noodles
1/2ricotta
1/2mushroom
noodles
remaining marinara
olives/faux parm
 
Bake uncovered in a preheated 375*F oven for an hour. Let sit 10 minutes before slicing.

Broccoli and Cheeze Soup.

Well played OhSheGlows. Well played.

  • 1 tsp extra virgin olive oil
  • 1 medium sweet onion, chopped
  • 2-3 garlic cloves, minced
  • 1 cup chopped celery
  • 4-4.5 cups chopped broccoli florets (2 heads, stems removed)
  • 1.5 cups peeled & chopped potatoes (about 3)
  • 3 cups vegetable broth
  • 2 tbsp nutritional yeast
  • 1/4 tsp cayenne pepper (or crushed red pepper flakes)
  • Low-fat vegan cheeze sauce, divided (see below for recipe)
  • 1/2 tbsp lemon juice (optional)
  • herbamare & onion powder, to taste
  • Kosher salt & black pepper, to taste
  • 1/4 cup fresh minced parsley, plus more to garnish
  • Daiya cheese, to garnish
  • Smoked Paprika, to garnish (optional)

  • 1. In a large skillet, heat the oil, onion, and garlic over medium-low heat, stirring frequently. Cook for about 5-6 mins.
    2. Add in the celery, broccoli, and potatoes and cook for about 5 minutes. Now, add the broth, nutritional yeast, and cayenne pepper and simmer for another 15 mins or so until the potatoes are just fork tender.
    3. Meanwhile, prepare your cheeze sauce (see below) while the soup simmers.
    4. Carefully transfer the soup (in two batches) into a blender. Blend until almost smooth (I left it a bit chunky, but you can blend as much as you wish) and place back into the pot. Stir in the cheeze sauce, reserving 1/3 cup for later.
    5. Stir in optional lemon juice, salt, pepper, and optional herbamare all to taste. Finally, stir in the minced parsley and spoon into bowls.
    6. Top the soup with croutons, Daiya cheese, remaining cheeze sauce, and smoked paprika.

    Low-Fat Vegan Cheeze Sauce (double batch)

    Adapted from here. I basically just doubled my old recipe and added a couple extra spices.
    Ingredients:
    • 1.5 cup unsweetened, unflavoured almond milk
    • 3/4 cup nutritional yeast
    • 1 tbsp Earth Balance or other non-dairy buttery spread
    • 2 tbsp all purpose flour
    • 1 tbsp + 1 tsp Dijon mustard
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/2 tsp kosher salt & freshly ground black pepper, to taste
    • 1/4 tsp cayenne pepper

    1. In a skillet or pot, melt the Earth Balance over medium heat.
    2. In a medium sized bowl, whisk together the flour and 1/4 cup milk until all clumps are gone.
    3. Whisk in the remaining milk (1.25 cups) as well as the milk and flour mixture into the pot. Now whisk in the nutritional yeast. Reduce heat to low-medium.
    4. Add Dijon, garlic powder, onion powder, salt and pepper to taste and whisk frequently over low heat until the sauce thickens up, for 3-5 minutes. Be careful not to burn it. Remove from heat once thick.

    Cashew Ricotta.

    I saw this cashew ricotta on my friend Crysta's blog... and totally wanted to try it - for 2 reasons. It looked good and was another new technique to making something animal based into plant based. I'm loving these little challenges. Plus, it's a Tal Ronnen recipe... so I knew it'd be good. And if it worked, it could open up the door to sooo many, now vegan, meals.

    It worked. I had to wait to find the perfect recipe to try it on... and then I had to get some probiotic powder (which, I'm still needed to look for other uses for). And someday I'll work up the nerve to try the beet ravioli she used it in... the balsamic maple syrup vinaigrette looked so good.

    Tal Ronnen's Cashew Ricotta Cheese
    2 cups raw cashews
    1 teaspoon probiotic powder (from 6 capsules - I use the All-Flora brand) dissolved in 1 cup of warm water.
    2 tablespoons nutritional yeast flakes
    1 1/2 teaspoons onion powder
    1 1/2 tablespoons minced chives
    2 tablespoons minced parsley
    1 teaspoon sea salt
    black pepper

    Put cashews in a bowl, add cold water to cover them, and refrigerate 12-14 hours. Drain and rinse them under warm water.

    Place nuts in a blender with the probiotic powder and water mixture, and blend until very smooth. Transfer to a clean, glass bowl, and let sit at warm room temperature (I leave the oven light on in the closed oven) for 14-16 hours to culture.

    Transfer to a medium bowl, and stir in remaining ingredients. Cheese will keep for a week under refrigeration.

    Now, I'm on the search for some good ricotta recipes...

    Cheezy Popcorn.

    I loooooove this popcorn. In fact, after typing this up - I've decided I need to go make it now... Super simple, and healthy (minus the vegan butter).

    Blender Mac & Cheese.

    Yet again, another ole college try to find a healthy version of Ava's favorite junked out mac & cheese. She wasn't a fan... (and now I officially give up trying to find one - I think that's just gonna be her 'thing')... but everyone else liked it. I love that you dirty only 2 things and it comes together super fast. Thanks again "GlowGirl".

    1 pound vegan pasta (or regular if you prefer!)
    1 1/4 cups water
    1 cup plain non-dairy milk
    3/4 cup nutritional yeast
    3 tablespoons cornstarch or potato starch
    1 tablespoon lemon juice
    1 teaspoon salt (or more to taste)
    1/2 teaspoon garlic puree
    1/2 teaspoon dry mustard
    1/2 teaspoon paprika
    1/2 teaspoon turmeric (curry powder)
    1 tablespoons tahini
    black pepper to taste

    Cook your preferred pasta according to the directions on the bag or box.

    While that is cooking, throw ALL ingredients (including 1 + 1/4 cup water) into the food processor or blender and blend for 30-60 seconds.

    Once pasta is cooked and drained, add sauce into sauce pan with pasta and simmer over low-medium heat stirring frequently. The thickening process takes 5-10 minutes. Don’t despair if you think the pasta is too watery- it REALLY thickens up nicely thanks to the cornstarch!

    You can get creative with this and mix in some vegetables or spinach too.

    Spicy Doritos Cheezy Dip.

    My friend Crysta turned me onto the blog, loveveggiesandyoga. And what I've tried has been some pretty good stuff. This one included. I have a dream of my kids sitting in front of a platter of all raw veggies and gobbling them up with some really yummy and healthy dip. The did like, but didn't gobble... at least not yet. But I'll try again. But that night for dinner we had this with nachos... yum!

    1/3 cup sunflower seeds
    1/2 cup hemp seeds (if you don’t have these, use Cashews, all Sunflower Seeds.Mix & Match your seeds as necessary)
    1/4 cup nutritional yeast
    1/2 of a red pepper
    3 tablespoons lemon juice 
    1/2 teaspoon salt
    1/2 teaspoon chili powder (add more to taste if desired)
    1/8 teaspoon cayenne pepper 

    Combine all ingredients in a blender and blend until smooth and well combined.

    Faux Parmesan.

    Parmesan cheese is something I use to love. It's like the perfect finish to a soup, a salad, bread sticks, pasta... you get the idea. And this isn't like the real thing. But it's a yummy substitute. My kids love to dip things, sprinkle things and scoop things. And this is a good sprinkle.

    While I'm still experimenting with what all I can use it on, Chef AJ puts it on air popped popcorn, potatoes and steamed veggies, ontop chili and soups. Yum.

    Plus, nutritional yeast is an excellent source of (a complete) protein, dietary fiber, vitamins and minerals.

    Faux Parmesan Cheese {raw}
    1 cup raw almonds or cashews
    1/2 cup nutritional yeast
    1 tablespoon salt-free seasoning (Benson's Table Tasty) {i just used Mrs. Dash}

    In a food processor fitted with the "S" blade or in a blender, combine all ingredients until a powdery texture is achieved. If you like ti more chunky, process less.

    Chili Cheese Fries.

    I had a craving for chili cheese fries... you'd think I'm pregnant - but I'm not. Who has those sort of cravings?! I worked up this little combo and loved it. We had a huge garden salad to make the not-even-naughty meal seem a little less not-even-naughty. It just felt like the right thing to do.

    Fries
    4 large Idaho potatoes, cut lengthwise into 6 wedges
    grill seasoning

    Chili
    1-2 cups cooked lentils
    1 large onion, chopped
    3 to 4 cloves garlic, finely chopped or grated
    1 jalapeño pepper, seeded and chopped
    1-2 tablespoons chili powder
    2 teaspoons ground cumin
    Salt and freshly ground black pepper
    3 tablespoons tomato paste
    Hot sauce, to taste
    2 tablespoons Worcestershire sauce
    1 1/2 cups vegetable stock

    Cheezy Sauce
    2 cups vegetable broth or water
    1/4 cup whole wheat flour
    1 tablespoon olive oil
    3 garlic cloves, minced
    pinch of dried thyme (crumbled in your fingers)
    1/4 teaspoon salt
    several pinches of freshly ground black pepper
    1/8 teaspoon turmeric
    3/4 cup nutritional yeast flakes
    1 tablespoon fresh lemon juice
    1 teaspoon prepared yellow mustard
    (from Veganomicon)


    Preheat oven to 450ºF.

    Place the potatoes into a large bowl. Spray them with EVOO spray and sprinkle with the grill seasoning and combine. Using a cookie cooling rack on top a baking sheet, pour the fries on top. With the cooling rack it'll allow the air to circulate all around the fries so they'll crisp everywhere. Plus it won't be necessary to flip them. Bake until golden brown, about 40 minutes.

    While the potatoes are roasting, place a large, heavy-bottomed pot over medium-high heat... add the onion, garlic, jalapeño, chili powder and cumin to the pot. Cook until the veggies soften, 5-6 minutes, and season with salt and freshly ground black pepper. Add the tomato paste to the pot and cook for about 1 minute, until it smells sweet and has caramelized slightly. Add the hot sauce, Worcestershire and broth to the pot. Bring everything up to a bubble, then reduce the heat and simmer the chili until thickened, about 10 minutes. Add in cooked lentils to warm.

    Cook the cheese sauce... Combine the broth and flour in a measuring cup and whisk with a fork until dissolved.

    Preheat a small saucepan over medium-low heat. Place the oil and garlic in the pan and gently cook for about 2 minutes (or just steam-fry), stirring often and being careful not to burn the garlic.

    Add the thyme, salt, and pepper, and cook for about 15 seconds. Add the broth, turmeric, and nutritional yeast, and raise the heat to medium. Use a whisk to stir constantly. The mixture should start bubbling and thickening in about 3 minutes; if it doesn't, turn the heat a bit higher.

    Once the mixture is bubbling and thickening, stir and cook for about 2 more minutes. Add the lemon juice and mustard. The mixture should resemble a thick, melty cheese. Taste for salt (you may need more depending on how salty your vegetable broth is), turn off the heat, and cover the pan to keep it warm until ready to use. The top might thicken a bit while it sits, but you can just stir it and it will be fine.

    Lay the fries out on a plate, pour over the chili and then add the cheese sauce. Yum.

    Baked Vegan Mac & Cheese.

    So I've been struggling with my almost 6-year-old with all things healthy eating. She use to be an amazing eater and eat any and everything healthy. Would ask me for healthy food and beg for shrek shakes. Long gone are those days, and I blame it all on kindergarten. It's like after seeing how the "other side" eats... and setting her eyes on that cafeteria line - it's all she wants. It's a constant battle.

    One day, post kindergarten corruption, she told me she wanted to go have a playdate at her friend Emily's house because her Mom makes them yummy macaroni & cheese... I almost cried. Ouch. So, I was on a quest to find my baby girl some healthy mac & cheese. Found this recipe, on an awesome new site my friend Natalie told me about. I spent a good 3 hours drooling over all her recipes.

    The bummer is, we all loved it, except her. I'm beginning to think that we're dealing with some sort of power struggle combined with the food issue. Lovely.

    1/2 medium potato, peeled and chopped (about 1/4-1/3 cup)
    1/2 large carrot, peeled and chopped (about 1/2 cup)
    1/2 small onion, peeled and chopped (about 1/4-1/3 cup)
    1 ½ cups raw cashews
    1 cup unsweetened almond milk
    4 garlic cloves
    6 tablespoons fresh lemon juice
    3 teaspoons kosher salt
    2 tablespoons nutritional yeast
    Freshly ground black pepper, to taste
    1 teaspoon mustard
    ~300-340 grams dry/uncooked whole wheat macaroni or other pasta
    1 slice bread
    1 tablespoon Earth Balance or butter
    Fresh or dried parsley, to garnish (optional)
    Paprika, to garnish

    Preheat oven to 350*F. Grab a small casserole dish and set aside. In a medium sized pot, add the chopped potatoes, carrots, and onion and fill with water until just covered. Bring to a boil and then reduce to low-medium heat. Cook for about 15 minutes until tender.

    Meanwhile, process 1 slice of bread until crumbs form in a food processor. Add in 1 tablespoon of Earth Balance and process until incorporated. Place in a small bowl and set aside.

    Now assemble your cheese sauce ingredients (cashews, almond milk, garlic, lemon, salt, yeast, pepper, mustard) and add just the cashews to food processor. Process until a fine crumb forms similar to corn meal. Now add in the rest of the cheese sauce ingredients and process until smooth.

    Once the veggies are cooked, drain and add to cheese sauce mixture in food processor. Process until smooth.

    Add your pasta to a medium sized pot and fill with water until the pasta is covered by about 1 inch or so. Bring to a boil and reduce to low, cooking for about 7 more minutes. Drain and rinse with cold water.

    In a large bowl, mix together your cheese sauce and drained + rinsed pasta. Scoop into your casserole dish and sprinkle with the breadcrumb mixture. Now garnish with paprika and bake in the oven for 30 minutes at 350*F. Allow to cool for about 10 minutes before serving. Sprinkle with chopped fresh parsley or dried parsley if you’d like.

    Note: This is a heavy and drier mac ‘n cheese. If you want it less dry, you might want to add some Earth Balance/butter or additional milk.

    Hurry Up Alfredo.

    Ya'll are going to love me for this one. Like, "L-O, L-O, L-O, L-O-V-E, L-O, L-O, L-O... I'm talkin bout... I'm talkin bout love!" (Any Ashlee Simpson Wentz fans out there? Nope? No one? Yeah, me neither!)

    Anyhow, back to this amazing pasta. It's for sure going into the Hatch Family rotation. It couldn't be more delicious. It couldn't be more easy. And it couldn't be more any on-hand, go-to meal to make, whatsoever. [any Chandler fans catch that one?... Man, I have got to stop writing these up late at night!] Although if you're just starting up on this vegan/plant-based thing it won't seem at all 'on-hand' ingredients to you at first. But this one alone is well worth the investment of the ingredients.

    I seriously wanted more and more of this one, and couldn't believe that it was vegan. Seriously, just try this tonight. Or, right now. I can't wait to play with it some and add roasted red peppers... or try it into a rose sauce... and try roasted garlic with it... yum!

    The only downfall was the garlic is not cooked, so the garlic flavor is strong - be ready for that. Too strong for my little Ava... "it's so good Mom... but it's just too strong!" I'll tone that down or try some roasted garlic cloves next time.

    1 cup soy or almond milk
    1/3 cup raw, unsalted cashews
    3 tablespoons low-sodium tamari/soy sauce/bragg's liquid amino's
    2 tablespoons Earth Balance margarine
    1 tablespoons tahini
    1 tablespoons fresh lemon juice
    2 teaspoons dijon mustard
    1/2 teaspoon paprika (smoked is awesome)
    1 pinch nutmeg
    2-4 cloves of garlic, optional (used 2, will use 1 next time)
    Black pepper, to taste
    whole wheat thin spaghetti

    Add all the ingredients to a blender and blend until smooth. This may work best in a high-speed blender (like a Vita-Mix), but you can definitely make it in a regular blender. Just blend extra-long, or perhaps strain if you want it perfectly smooth. Tiny bits of cashews won’t hurt anyone though!

    If you’re making this sauce for pasta, drain the pasta and return it to the hot empty pan. Pour the sauce over, place on medium heat, and stir until heated through. Serve with lots of fresh cracked black pepper. I love it with steamed broccoli added in!

    5 Star Hurry-Up Alfredo...
    I just moved this already yummy dish up to 5 star yumminess... I cut up sundried tomatoes and added to the pasta water 1 minute before it's done. And sauted baby bella mushrooms and added them in after I mixed the pasta and sauce together. SOOOOOOO yummy!

    Homemade Crackers.

    I've been desperate to try and find a good cracker recipe. Graham crackers I've got figured out... but I need real crackers. Like our favorite Milton crackers that I totally don't like paying $3 a box for. The first time I tried this original recipe it lacked a lot of flavor that we were use to with our favorite crackers... and lacked the crunch. Turns out I didn't roll it out thin enough with my cheapy plastic roller. They were still good, just not stellar. I'm sure I'll resort to buying the quick and convenient box... but glad I found a descent sub.

    Next time: I'll add more seasonings and borrow my Mom's marble rolling pin. To be continued...

    2 3/4 cups unbleached flour (i used whole wheat)
    1/2 cup nutritional yeast flakes
    1 teaspoon baking soda
    1 teaspoon onion salt
    a few shakes of cayenne pepper
    1/4 teaspoon garlic powder
    1 teaspoon dry mustard
    1/2 cup cold olive oil
    1/2 cup plus 2 tablespoons ice water
    1 tablespoon apple cider vinegar
    sea salt for topping, if desired

    Heat the oven to 375 degrees. Cover baking sheets with parchment paper.

    Combine all the dry ingredients in a large mixing bowl.

    Slowly drizzle in the olive oil while stirring. Then, drizzle in the water and apple cider vinegar. Form the dough into a ball. I found it easiest to form it into three balls and work with smaller pieces.

    Roll the dough very thin -- under 1/8th of an inch. This is important, because the crackers will puff up substantially even this thinly rolled.

    Cut as desired. I used some small cutters. You don't have to do that. You can use your pizza cutter to cut them into squares.

    Place them on your baking sheet. 1/2" apart is plenty, as they don't expand.

    Bake the crackers 10 to 12 minutes, or until browned. They will get crispier as they cool.

    Repeat until all your dough is used. It's much harder to reroll "recycled" dough. It gets very stiff, so use as much of it as you can the first time around.

    Love this for nachos, pastas, to dip broccoli or steak fries in. Yum.

    Calzones.

    My Mom and I have been meaning to test out a vegan "cheese" sauce. We even bought a case of the nutritional yeast and were ready to go. We just had to find the right one. 

    Enter a conversation with Mandy telling me about this recipe on our friends blog that had a vegan cheese sauce. I was super excited to check it out and give it a try. It did not disappoint! I hijacked her recipe and made a few of my adjustments below. Thank you Brooke!! What's awesome about it is it's endless possibilities!!

    Calzones
    pizza dough recipe (below)
    tomato sauce
    basil
    mozzarella "cheese" sauce (below)
    toppings: chopped onions, diced cremini mushrooms, chopped baby spinach, roasted red peppers, tomatoes, etc.

    Make pizza dough. While it is rising prepare the filling. For the filling saute the veggies for a couple minutes. Make sure they're still tender-crisp. You definitely don't want soggy veggies! After the dough has risen, roll it out onto an oiled jelly roll pan. Spread your sauce lengthwise on half of the dough, sprinkle with basil. Layer with veggies. Top with mozzarella "cheese" sauce. Flip over the empty half of the crust and press down around the edges to seal in filling. Bake at 350 degrees for 20-25 minutes or until golden brown. Slice and serve!

    Whole Wheat Breadstick Dough
    1 1/2 cups warm water
    1 tablespoon yeast
    2 tablespoons shy agave nectar
    2 teaspoons salt
    3 cups whole wheat flour

    Mix water, yeast and agave. Let sit for about 3-4 minutes. Add 1 1/2 cups flour and salt to mixture. Mix until smooth and elastic. Add remaining 1 1/2 cups flour. Knead for 3-5 minutes. Place on lightly oiled jelly roll pan to rise for 10 minutes (can skip this step if in a hurry).

    Mozzarella Cheese Sauce-Vegan
    I cannot wait to use this for other things. Brooke says to make it smoky add 1/8 teaspoon of liquid hickory smoke. Yum!!
    1 cup water
    2 small cloves of roasted garlic
    2 tablespoons fresh lemon juice
    1-2 tablespoons tahini (the larger amount makes it "cheesier")
    1/4 cup nutritional yeast
    3 tablespoons rolled oats
    1 tablespoon cornstarch or arrowroot powder
    1/8 teaspoon dry mustard
    1 1/2 teaspoon onion powder
    1/2 teaspoon salt

    Place all ingredients in a blender or food processor and blend until completely smooth. Pour into a small saucepan and cook over medium heat, stirring constantly, until smooth and thick.
